Cookiewiches
Cookiewiches is an easy dinner. Made with 6 sq. (1 oz. each) semi-sweet chocolate, 16 (3-inch diameter) favorite cookies, 1/3 c. chopped peanuts and 1 pt. favorite ice cream, slightly softened, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Baking sheet with waxed paper; set aside. In small saucepan, low heat, melt chocolate, stirring until smooth.
Using tongs, dip cookies into chocolate; shake off excess.
Prepared baking sheet. Sprinkle top cookies with peanuts.
With metal spatula, spread ice cream on flat side of each of 8 cookies, dividing evenly.
Top with one of remaining cookies, placing flat side on ice cream. Press lightly.
Wrap each sandwich with plastic wrap.
Freeze until firm.
Makes 8 servings.
