Congealed Waldorf Salad
Congealed Waldorf Salad is an moderately easy salad you can prepare in about 1 hour 10 minutes. Made with c. apple cider, divided, (3 oz.) pkg. lemon jello, large apple, unpeeled and finely chopped, c. finely chopped celery and c. finely chopped pecans, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Bring 1 cup cider to a boil; add gelatin and stir until dissolved.
Stir in remaining cider.
Chill until consistency of unbeaten egg white.
Fold in apple, celery and pecans.
Pour into a 4-cup mold.
Chill until set.
Unmold on a lettuce lined plate and top with a dollop of mayonnaise.
