Confetti Salad
Confetti Salad is an moderately easy dinner. Made with 1 (3 oz.) pkg. gelatin (lemon or lime), 1 c. boiling water, 2 tsp. vinegar, 1/8 tsp. salt and 7 to 10 ice cubes, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Dissolve gelatin in boiling water.
Add vinegar, salt and ice cubes; stir constantly until thickened, about 3 minutes.
Remove any unmelted ice.
Fold in remaining ingredients.
Spoon or pour into individual molds or a 1-quart mold.
Chill until firm.
Serve on greens with mayonnaise or salad dressing.
Makes 4 to 6 servings.
