Company Shrimp Casserole
Company Shrimp Casserole is an moderately easy dinner. Made with 2 to 3 lb. cooked, peeled shrimp, 1 c. raw rice, cooked, 1 c. sharp cheese, grated, 1 can mushroom soup and 1/2 c. green peppers, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix together first four ingredients.
Saute peppers, onions and celery in butter.
Add to shrimp mixture.
Put in long flat casserole and completely cover with sliced lemons.
Cook, covered with foil, for about 20 minutes at 375Β°.
May be made ahead and frozen.
Serve with French bread, salad and dessert for a delicious company meal.
