Company Egg Casserole
Company Egg Casserole is an moderately easy dinner. Made with 1/2 c. margarine, 1 lb. fresh mushrooms, diced, 1 lb. monterey jack cheese, shredded, 10 extra large eggs or egg beaters (natural choice in carton) and 1 pt. cottage cheese, creamed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large frying pan, melt margarine.
Set aside to cool. Place diced mushrooms into cooled margarine and stir until completely coated.
In large bowl, beat eggs until blended.
Add remaining ingredients and mushrooms.
Pour into well-greased 9 x 13-inch dish and bake at 350Β° for 45 minutes.
Test with a knife; done when it comes out clean.
If using Egg Beaters, increase time 15 to 20 minutes.
Great for heart patients.
