Split the fermented cassava into thick pieces and remove any tough fibers from the centers.
Simmer palm sugar, coconut milk, pandan, and salt until glossy, then stir in grated coconut for a thick sauce.
Brush a griddle with butter or coconut oil and grill the cassava until lightly charred and warmed through.
Arrange the cassava on a small plate and spoon the coconut-palm sugar sauce over the top while hot.
Serve immediately so the smoky edges stay distinct from the sticky sauce.
