Coconut Pound Cake
Coconut Pound Cake is an moderately easy dinner. Made with 1 c. shortening, 1 stick margarine, 2 1/2 c. sugar, 5 eggs and 1 c. sweet milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream the shortening and margarine well.
Add sugar, a little at a time, and continue creaming.
Add eggs, one at a time, beating well after each.
Add milk and flavoring.
Add dry ingredients; beat well.
Fold in coconut.
Bake in a large tube pan for about 1 1/2 hours at 300Β°.
Let cool in pan at least 15 minutes.
This cake needs no icing.
