Coconut Pie Filling
Coconut Pie Filling is an easy dinner. Made with 1 large box jell-o cook and serve pudding mix, 3 c. milk (i use 2 c. nonfat powdered milk (mixed) and 1 c. evaporated milk), 2 large or 3 small eggs, separated and 3/4 c. coconut, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook filling as on box but add egg yolks to mixture before cooking.
Add coconut after filling is cooked.
