Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 1 c. plus 2 tbsp. sugar, 3 tbsp. flour, 2 1/2 c. milk, 3 eggs, separated and 1 tsp. margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sift 1 cup sugar and flour together; add to milk.
Beat egg yolks; add.
Cook until mixture begins to thicken.
Add margarine, 1 teaspoon vanilla and coconut.
Reserve enough coconut to sprinkle on top.
Cook until thick.
Pour into pie crust.
Beat egg whites until thick; add remaining sugar and vanilla.
Beat until stiff.
Put on pie; sprinkle with reserved coconut.
Put in oven and brown.
