Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 1 fresh coconut, grated, 1 can evaporated milk, 1/2 can water, 1 c. sugar and 4 egg yolks (keep whites), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Separate eggs; reserve about 1/4 cup coconut.
Whip egg whites.
Combine all other ingredients; cook over low heat until thickened; pour into pie shell.
Top with egg whites; sprinkle with 1/4 cup coconut.
Brown on broil for about 2 minutes.
