Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 3 eggs, separate and save whites for icing, 1 c. sugar, 2 c. sweet milk, 1/4 stick margarine and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix egg yolks, sugar and margarine well.
Add milk.
Mix well. Put in a double boiler and bring to boiling point.
Then add cornstarch and vanilla.
(Mix a little milk with starch and vanilla before adding to hot mixture.)
Cook until thick as desired.
Pour into a baked pie shell.
Top with icing of egg whites and bake until brown.
