Coconut Pecan Delight
Coconut Pecan Delight is an moderately easy dinner. Made with 1 1/2 c. unsifted all-purpose flour, 1/2 c. melted margarine, 2 2/3 c. coconut, 1 c. chopped pecans and 1 (8 oz.) pkg. cream cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine flour, pecans and margarine; mix well.
Press evenly into bottom of 13 x 9-inch pan.
Bake at 350Β° until lightly brown. Cool.
Beat cream cheese until very soft.
Gradually add 1/2 cup milk, blend for 2 minutes.
Add remaining milk and pudding, blend 2 minutes.
Stir in remaining coconut and pecans.
Pour over baked crust.
Spread Cool Whip over pudding.
Sprinkle with coconut and pecans.
Chill at least 2 hours before serving.
