Coconut Island Cookies
Coconut Island Cookies is an moderately easy dinner. Made with 3 (3 oz.) envelopes unsweetened chocolate, premelted, 1 tsp. instant coffee, 1/2 c. soft butter, 1 c. packed brown sugar and 1 egg, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In large mixer bowl combine chocolate, coffee, butter, brown sugar, egg, sour cream, flour, soda, salt and 1/3 cup coconut. Mix on lowest speed until a dough forms.
Drop by rounded teaspoon onto greased cookie sheets 12 to 15 minutes.
Frost warm. Sprinkle with remaining coconut.
