Coconut Icing
Coconut Icing is an easy dinner. Made with 3 c. sugar, 2 pkg. frozen coconut or 1 lg. coconut freshly grated, 1 1/2 c. milk, 1 stick butter and 1 t. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook sugar and milk together until it changes color from white to oyster white.
Remove from heat and add butter, mix, then add vanilla, mix well.
Stir in fresh or defrosted coconut.
Cool to luke-warm and put between layers and on sides and top of cake.
