Coconut Iced Cookies
Coconut Iced Cookies is an moderately easy dinner. Made with 2 envelopes plain knox gelatin, 1 c. sugar, 1/2 c. cold water, 1 c. light karo corn syrup and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In large mixing bowl, dissolve gelatin in 1/2 cup water.
Set aside.
Bring to a boil the sugar and corn syrup.
Pour hot syrup over gelatin mixture; stir to blend.
Cool thoroughly.
Add vanilla.
Beat 8 to 10 minutes.
Let stand 3 minutes.
Spoon onto wafers or gingersnaps.
Roll in coconut.
