Coconut Frosting
Coconut Frosting is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. light corn syrup, 3 tbsp. water, 3 egg whites and 1/4 tsp. cream of tartar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine sugar, syrup, water, egg whites, cream of tartar and salt in top of double boiler.
Cook over boiling water, beating with electric mixer until mixture stands in peaks.
Remove from heat.
Add vanilla.
Continue beating until frosting holds deep swirls.
Frost cake.
Sprinkle immediately with coconut, pressing into sides for pretty cake.
