Coconut Cream Pie
Coconut Cream Pie is an moderately easy dessert you can prepare in about 1 hour 18 minutes. Made with c. sugar, c. flour, egg yolks, c. milk (i use 1/2 c. pet milk and 1 1/2 c. whole milk) and margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Blend together sugar and flour.
Beat egg yolks.
Add a little milk to them.
Add this to sugar and flour.
Add remainder of milk and stir well.
Add margarine.
Place in large microwave bowl and cook in microwave on High for 2 minute intervals until thick. Stir well between cooking intervals.
When thick, add vanilla and coconut. Pour into baked 8-inch pie shell.
