Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 2/3 c. sugar, 1/4 c. argo cornstarch, 1/4 tsp. salt, 2 1/2 c. milk and 3/4 c. flaked coconut, divided, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a 2 quart saucepan stir together sugar, cornstarch and salt.
Gradually stir in milk until smooth.
Stir in slightly beaten egg yolks.
Bring to a boil over medium heat stirring constantly to prevent sticking.
Boil for 1 minute.
Remove from heat and stir in vanilla.
Cool slightly and stir in 3/4 cup coconut. Spoon filling into cooled pastry shell.
