Coconut Cream Cheese Frosting
Coconut Cream Cheese Frosting is an moderately easy dinner. Made with 1/3 c. plus 1 tbsp. butter, 1 1/2 c. shredded coconut, 6 oz. cream cheese, 4 c. powdered sugar and 1 or 2 tbsp. milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Melt 1 tablespoon butter in saucepan. Add coconut. Saute until just golden brown, stirring constantly.
Remove from heat. Cream remaining butter. Add cream cheese, powdered sugar and milk.
Beat after each addition. Add vanilla and 1 cup sauteed coconut. Spread on cake. Sprinkle with remaining coconut.
Will ice a 13 x 9-inch cake.
