Coconut Cookies
Coconut Cookies is an moderately easy dinner. Made with 1 c. butter, 1 c. firmly packed brown sugar, 1 egg, 2 tsp. vanilla and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cream butter and sugar until fluffy.
Mix in egg, vanilla and salt.
Add flour, a little at a time.
Stir in coconut.
Drop by teaspoonfuls onto ungreased baking sheet.
Flatten with floured bottom of a glass.
Sprinkle with additional coconut, if desired. Bake at 375Β° for 10 minutes or until golden brown around edges. Makes about 4 1/2 dozen cookies.
