Grate coconut.
Dissolve yeast in warm water.
Cream sugar and shortening.
Add vanilla.
Add coconut.
Add dry ingredients with 2 parts milk.
Knead 5 minutes.
Cover; let double in size.
Shape and place in greased pan.
Let double in size.
Bake at 350Β° for 30 minutes or until inserted knife comes out clean.
Remove from pan; cool on rack.
