Classic Potato Salad
Classic Potato Salad is an moderately easy dinner. Made with 2 1/2 lb. red potatoes, 1 stalk celery, diced, 1/2 c. sweet pickles, chopped, 2 hard-cooked eggs, sliced and 2 green onions, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook potatoes in boiling water until tender.
Drain and cool. Peel and cube potatoes.
Combine potato, celery, sweet pickles, eggs and onions and toss gently.
In a small bowl combine mayonnaise, lemon juice, salt, pepper and dry mustard.
Spoon mayonnaise mixture over potato mixture and toss gently.
May be served warm or cold.
