Chuck Wagon Steak
Chuck Wagon Steak is an moderately easy dinner. Made with 1/3 c. flour, 1 tsp. salt, 1/4 tsp. pepper, 2 to 2 1/2 lb. round steak and 3 tbsp. shortening, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix flour, salt and pepper.
Rub or pound mixture into the meat.
Heat oil in heavy skillet.
Brown meat well on all sides. Blend beef broth, water, barbecue sauce and chili powder.
Pour over meat.
Cover and simmer for 1 hour.
Add green pepper and olives. Simmer 1 to 1 1/2 hours longer, until meat is tender. Skim fat from gravy and thicken as desired.
