Christmas Jam
Christmas Jam is an moderately easy dinner. Made with 1 (11 oz.) pkg. dried apricots, 1 (30 oz.) can pineapple chunks, 3 1/2 c. water, 1 (8 oz.) jar maraschino cherries and 6 c. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In large pan, combine apricots, pineapple and syrup, water and cherry syrup.
Let stand 1 hour, then cook slowly until apricots are tender.
Add sugar; cook slowly, stirring often, until thick (216Β°).
Cut cherries in quarters; add and cook a few minutes longer.
Pour into hot, sterilized jars and seal.
Makes 6 1/2 pints.
