Chow Chow
Chow Chow is an moderately easy dinner. Made with 1 peck green tomatoes, 10 large onions, 6 green bell peppers, 6 red bell peppers and 1 head cabbage, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Grind or chop tomatoes and peppers; add 1/2 cup salt.
Place in cloth bag, let drop overnight.
Grind cabbage, onions and apples. Mix with drained tomatoes and peppers.
Combine 2 cups sugar, 1 quart vinegar, 2 tablespoons pickling spice (tied in bag).
Bring to a boil.
Add vegetables and boil 15 minutes or until all vegetables have changed color.
Pack into jars; seal.
Makes about 20 to 25 pints.
