Chocolate Scotcheroos
Chocolate Scotcheroos is an moderately easy dinner. Made with 1 c. sugar, 1 c. light corn syrup, 1 c. peanut butter, 6 c. rice krispies (1 whole small box can be used) and 1 c. chocolate chips, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine sugar and syrup in 4-quart saucepan.
Cook over moderate heat until sugar dissolves (as it begins to bubble) and stirring frequently.
Remove from heat; stir in peanut butter thoroughly.
Add Rice Krispies; continue to mix until all cereal is well covered.
Pour mixture into 9 x 13-inch pan lined with waxed paper.
Press mixture into pan.
Melt chocolate and butterscotch chips together in a double boiler.
Pour over the top, spreading evenly.
Cool until firm; cut into bars.
Yields about 48 (2 x 1-inch) bars.
