Chocolate Mint Pies
Chocolate Mint Pies is an moderately easy dinner. Made with 1 box chocolate wafers (without icing in the middle), 1 c. butter or margarine, 2 c. sifted confectioners sugar, 4 (1 oz.) blocks unsweetened baking chocolate and 4 eggs, this recipe delivers authentic, satisfying flavors. Cream together butter and sugar.
Blend in melted chocolate and add eggs.
Beat well.
Blend in peppermint and almond extracts.
Use foil cupcake liners.
Fill each cup 3/4 full. Place whipped cream on top of each.
Sprinkle with nuts and top with cherry half.
Freeze for 2 hours.
Defrost 10 to 15 minutes before serving.
