Chili Rellenos Pie
Chili Rellenos Pie is an moderately easy dinner. Made with 2 (7 1/2 oz.) cans whole chilies (ortega), 1 large can evaporated milk, 1 tbsp. oil, 1 lb. jack cheese, sliced and salt and pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Split chilies; remove seeds.
Lay flat; rinse and drain.
Rub oil on bottom and sides of two 9 x 13-inch pans or two 9 x 9-inch pans.
Spread 1/2 of the chicken in each pan or pans, skin side down.
Place sliced cheese on chilies; sprinkle with salt and pepper.
Beat eggs and milk; pour over cheese and peppers (chilies).
Sprinkle with grated Cheddar cheese.
Bake in a 350Β° oven for 45 minutes.
Serve hot with salsa.
