Chili
Chili is an moderately easy dinner. Made with 8 lb. ground beef, 2 to 3 large onions, 1 1/2 to 2 c. green pepper, 6 heaping tbsp. chili powder and 2 (no. 10) cans tomatoes, crushed (2 gal.), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Brown beef, onion and green pepper (brown onion and pepper separate from beef).
Mix other ingredients; simmer then add beef, onion and pepper.
Simmer for several hours to improve flavor. Add kidney beans last 30 minutes of cooking.
Serves 75.
