Chile Rellenos
Chile Rellenos is an moderately easy dinner. Made with 2 (4 oz.) cans green chiles, roasted and peeled, 1/2 lb. cheese (longhorn or monterey jack), flour, 2 eggs, separated and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut cheese into strips and press into chiles.
Dredge with flour.
Whip egg whites until stiff.
Beat yolk, salt and 1/4 cup flour.
Fold in egg whites.
Heat oil in skillet (2 inches).
Dip chiles in egg mixture.
Place in skillet.
Fry until brown, turn and fry on other side.
