Chickumber Chowder
Chickumber Chowder is an impressive dinner. Made with 1/2 c. chopped onion, 1/4 c. butter or margarine, 1/4 c. flour, 1/2 tsp. seasoned salt and 1/4 tsp. white pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a three quart saucepan, saute onion in butter or margarine until tender but not brown.
Blend in flour, salt and pepper. Stir in chicken broth.
Cook and stir until thick and bubbly.
Add cucumber.
Cover and simmer for 10 minutes.
Pour half the mixture at a time into a blender or food processor.
Cover and blend on medium for 30 seconds.
Return all the mixture to saucepan.
