Chicken-Zucchini Casserole
Chicken-Zucchini Casserole is an moderately easy dinner you can prepare in just 54 minutes. Made with c. shredded carrots, c. shredded zucchini, c. grated onion, c cooked diced chicken (2 chicken breasts) and (10 3/4 oz.) can 99% fat-free mushroom soup, this recipe delivers authentic, satisfying flavors. Saute carrots, zucchini and onion in skillet sprayed with Pam. Add chicken.
Mix in 1 1/2 cups stuffing, seasoning, 1 can mushroom soup and 1 can water (can add more water if you want it less dry).
Put in 2-quart casserole.
Cover with rest of stuffing.
Makes approximately 8 servings.
