Chicken Wakiki Beach
Chicken Wakiki Beach is an moderately easy dinner. Made with 1 whole chicken, cut up or choice pieces, 1 large can pineapple rings (save juice), 1 c. sugar, 2 tbsp. cornstarch and 3/4 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Wash chicken; don't dry.
Salt, pepper and flour.
Toss chicken in flour.
Brown in oil.
Place chicken in a baking dish.
Place pineapple juice in a 2 cup measuring cup.
Add water to juice to make 2 cups liquid (you may use full strength juice, I do).
Put juice in a saucepan.
Add sugar, cornstarch, vinegar, soy sauce and bouillon cube.
Cook on medium heat until thick.
Stir constantly. Pour over chicken.
Bake 1 hour at 350Β°.
The last 30 minutes place pineapple rings on top of chicken.
Serve over rice.
