Chicken Tostada
Chicken Tostada is an easy dinner. Made with 1 recipe black bean and corn salad, 2 c. shredded cooked chicken breast, 4 flour tortillas, 4 c. shredded lettuce, some dark green and 1/2 c. monterey jack cheese, shredded, this recipe delivers authentic, satisfying flavors. Combine chicken with bean salad.
Bake flour tortillas in 375Β° oven until crisp (about 7 to 10 minutes).
Place a baked tortilla on each of four plates.
Top each with 1 cup lettuce.
Divide chicken and bean mixture into four portions, mound on top of lettuce.
Top each with 2 tablespoons shredded cheese.
Serves 4.
