Chicken Taco Rice
Chicken Taco Rice is an moderately easy dinner. Made with 1 lb. boned chicken breasts, cut in strips, 1 can tomato sauce, 1 can corn, drained (12 oz.), 1 1/2 c. instant rice and 1/2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. Cook and stir chicken in hot oil until lightly browned.
Add broth, tomato sauce and seasoning mix. Bring to a boil.
Reduce heat, cover and simmer about 5 minutes.
Add corn and red pepper. Bring to a full boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes. Fluff with fork and serve with cheese, tortilla chips and sour cream, if desired.
