Chicken Stew
Chicken Stew is an moderately easy dinner. Made with 1 stewing chicken, 2 large onions, sliced, 1 qt. stewed tomatoes, 2 c. shell or kidney beans and 3 medium potatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Stew chicken in 2 to 3 quarts water until bones can be easily removed, about 2 1/4 hours.
To reduce fat, chill broth until fat rises to top and skim off.
Combine boned chicken, broth and all other ingredients in stew pot and simmer until all is tender, stirring occasionally.
Add water, as necessary.
Longer, slower cooking makes it best.
