Chicken Salad Pockets
Chicken Salad Pockets is an moderately easy dinner. Made with 1 1/2 c. cubed cooked chicken breasts, 1/2 c. sliced celery, 2 tbsp. golden raisins, 1/3 c. reduced calorie mayonnaise and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In medium bowl, combine chicken, celery, raisins and green onions.
In small bowl, combine mayo, lemon juice and ginger; blend well.
Pour dressing over chicken mixture; mix well. Arrange 1/4 of spinach leaves and 1/4 of apple slices in each pocket with the pieces extending slightly over edge of pocket. Spoon 1/4 of chicken salad mixture into each pocket.
