Made with 4 c. chopped cooked chicken breast (or a whole chicken), 3 celery ribs, 2/3 c. seedless green grapes, 1/3 c. canned coconut (optional) and 2/3 c. slivered almonds, toasted, this recipe delivers authentic, satisfying flavors. Coarsely chop celery ribs and half the grapes.
In a large bowl, combine chicken, celery, grapes, coconut and almonds. Toss, mixing well.
Blend whipped cream with mayonnaise, lemon juice and salt.
Fold into chicken mixture.
