Chicken Salad
Chicken Salad is an moderately easy dinner. Made with 1 (8 oz.) plain low-fat yogurt, 4 tsp. honey (more if desired), 1 small can crushed pineapple, drained, 1/3 c. white raisins and 1/2 c. chopped walnuts, this recipe delivers authentic, satisfying flavors. Combine chicken, apples, celery, walnuts and raisins in a bowl. Toss and mix.
Mix yogurt with honey and drained crushed pineapple.
Stir yogurt mixture into chicken mixture and toss until well coated.
Serve on lettuce leaves, if desired.
Garnish with seedless white grapes or mandarin oranges.
This is better if eaten the day it is prepared.
