Chicken Salad
Chicken Salad is an moderately easy dinner. Made with 1 large fryer or hen, boiled, deboned and chopped fine, 1 doz. eggs, boiled and chopped, 1 cup chopped dill pickles, 1 cup chopped celery and 3/4 cup chopped green onion, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix chicken, eggs, pickles and chopped seasonings and season to taste.
(Food processor may be used, but don't chop too fine.) Add broth and enough mayonnaise to get a spreading consistency. Allow to chill at least 2-3 hours for flavors to blend.
Spread on sandwiches or stuff into tomatoes or scooped out cucumbers for a refreshing summer lunch.
