Chicken Rice Casserole
Chicken Rice Casserole is an impressive dinner. Made with 2 c. water, 1 c. rice, 1 tbsp. oleo, salt and 2 lb. chicken breast (boneless), skinned, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cut chicken into strips (2 inches or so).
Salt, pepper and flour breasts (first).
Bring to boil water, rice, 1 tablespoon oleo and salt.
Turn down to simmer and simmer 15 minutes, then do breasts.
Brown them in 1/2 cup oleo.
Remove from pan; saute onions.
Add soup, milk and cheese.
Cook until cheese melts.
Add sour cream to soup mixture. Add cooked rice.
Season to taste.
Pour into greased 9 x 13-inch pan.
Place chicken breast in rice mixture.
Bake at 350Β° until hot and bubbly, about 30 minutes.
