Chicken Pasta Primavera
Chicken Pasta Primavera is an impressive dinner. Made with 1 pkg. boneless chicken breasts, 2 tbsp. vegetable oil, 4 green onions, cut in julienne strips, 2 tsp. minced garlic and 1 lb. zucchini (2 c.), cut in strips, this recipe delivers authentic, satisfying flavors. Slice chicken into thin strips.
Saute over medium-high heat with 1 tablespoon of oil; add green onions and garlic.
Saute for 1 minute.
Heat remaining oil in skillet; add zucchini and carrots and saute 2 minutes.
Stir in broth, wine, parsley, oregano and pepper.
Simmer 1/2 hour.
Serve over pasta; sprinkle with cheese.
