Chicken Minestrone Soup
Chicken Minestrone Soup is an moderately easy dinner. Made with 6 to 8 c. chicken broth, 2 c. uncooked medium noodles, 1 (14 1/2 oz.) can italian-style diced tomatoes, 1 (29 oz.) can mixed vegetables, drained and 2 1/2 to 3 c. coarsely chopped cooked chicken, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a large soup pot, heat the chicken broth to boiling. Add the noodles and cook over medium heat for about 7 minutes. Add remaining ingredients and continue to cook over low heat for another 8 to 10 minutes. Taste and adjust seasoning, if needed. You might want to add a little salt, if your broth is homemade. Store bought broth seems to be more salty.
