Chicken Manicotti
Chicken Manicotti is an easy dinner. Made with 16 oz. spaghetti sauce, 2 whole large chicken breasts (skinless and boneless), 4 oz. cottage cheese or ricotta and 2 oz. mozzarella, shredded, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Using mallet, pound chicken pieces to about 1/4-inch thickness and set aside.
Put some sauce in bottom of 6 x 10-inch baking pan.
Spoon Ricotta onto centers of breasts and roll jellyroll fashion.
Arrange chicken rolls, seam side down.
Pour remaining sauce over chicken.
Top with Mozzarella and bake at 350Β° for about 45 minutes or until tender.
