Chicken Majorca
Chicken Majorca is an impressive dinner. Made with 3 to 4 lb. chicken, 3 tbsp. bacon fat, 2 tbsp. sherry, 1 tsp. tomato paste and 1/2 tsp. gravy master or kitchen bouquet, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cut chicken as for casserole.
Brown in bacon fat; add sherry. Remove chicken; add to pan the tomato paste, Gravy Master, flour and stock.
Stir until boils.
Put back chicken with tarragon, parsley, salt and pepper.
Cover.
Cook slowly for 35 minutes.
