Chicken Luau
Chicken Luau is an moderately easy dinner. Made with 4 lb. chicken, 2 tbsp. oil, 2 cloves garlic, minced, 3 c. chicken broth and 2 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cut chicken into serving pieces.
Heat oil in skillet and brown.
Stir in garlic and add broth.
Simmer 1 1/2 hours, until chicken is tender.
Place in casserole dish and keep warm in oven. Bring broth to a boil and reduce to 2 cups.
Blend cornstarch and water to make paste; stir into broth and cook.
Stir frequently until thick.
Drain spinach and stir spinach and coconut milk into chicken broth.
Season with salt and pepper to taste.
Pour over chicken and serve.
