Chicken Loaf
Chicken Loaf is an moderately easy dinner. Made with 1 chicken (4 to 5 lb.), 2 c. bread crumbs, 1 c. cooked rice, 5 eggs, well beaten and 4 green onions, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil chicken in seasoned water until tender.
Let cool in broth. Skin and cut in 1-inch cubes.
Mix everything together. Bake in greased 3-quart casserole for 1 hour at 350Β°.
Serve with following Mushroom Sauce.
