Chicken Fiesta Casserole
Chicken Fiesta Casserole is an moderately easy dinner. Made with 2 1/2 to 3 lb. chicken pieces, salt, pepper, paprika, 2 tbsp. margarine, 1/4 lb. pork sausage and 3/4 c. sliced green onions, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350Β°.
Season chicken with pepper, salt and paprika.
In large skillet, melt butter.
Add chicken to skillet. Brown well.
Drain chicken on paper towels.
Set aside.
Cook sausage, celery and onions in same skillet over medium-high heat, stirring frequently, until vegetables are crisp-tender.
Add rice, corn, broccoli and lemon juice.
Mix well.
Pour into shallow baking dish.
Arrange chicken on top of rice mix, pressing chicken slightly into rice mixture.
Sprinkle with shredded cheese.
Cover with foil.
Cook until chicken is no longer pink in center. Uncover.
Lightly brown cheese.
