Chicken Fiesta
Chicken Fiesta is an moderately easy dinner. Made with 1 to 1 1/2 lb. choice chicken pieces (i use breast tenders), 1 lb. ground sausage, creole seasoning, 1 c. chopped bell pepper and 1 c. finely diced celery, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Sprinkle chicken tenders (or any part of chicken) with Creole seasoning.
Brown in 2 tablespoons butter.
Remove and set aside. In same skillet, brown sausage and vegetables until vegetables are tender.
Cook Rice-A-Roni according to directions.
Combine the cooked Rice-A-Roni and sausage mixture.
Add the Mexicorn and the soups.
Stir in 1 cup of cheese.
Pour this mixture into a casserole dish.
Place the chicken pieces on top of the casserole. Bake at 350Β° for 25 to 30 minutes.
