Chicken Enchilada
Chicken Enchilada is an moderately easy dinner. Made with 3 c. diced boneless chicken breast, 12 tortillas, 2 c. cheddar cheese, 2 c. monterey jack cheese and 1 small can green chiles, diced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a 9 x 13-inch pan put the following: rolled up tortillas with microwaved chicken, most of cheese, green pepper, onion and olives.
Continue until all tortillas are filled and in pan.
Pour soup, sour cream, green chiles and jalapeño peppers in separate bowl.
Mix with spoon.
Pour over tortillas.
Put rest of cheese and olives on top.
Bake at 350° for 20 to 30 minutes.
